The vineyard/the winemaking:
Grapes are sourced from ten year old vines, grown on sandy soil with stony topsoil. The climate is continental and temperatures in summer can reach as high as 40 degrees, but this is moderated by the altitude of 700 m above sea level. Wine is fermented in stainless steel, with 10% stems. It is gently pumped over for around 12 days. The wine then spends four months in 1-5 year old French oak barriques, it is then transferred to concrete before bottling.
We are a close family business and are currently in our second generation. We are based on our natural lavender farm, Yorkshire Lavender in the North Yorkshire countryside.
So why wine?
With a member of our staff, Timi, a trained sommelier; it seemed crazy to let that enthusiasm and experience go to waste.
Wine starts in the ground! Just like lavender the correct soil, conditions and care are vital to grow excellent grapes to make exceptional wine.
Our commitment to our natural lavender farm along with Timi’s enthusiastic expertise has led to a developing interest in natural, organic, bio-dynamic wines.
